Welcome back to Osama Jalali’s Food World! Today, I am sharing my authentic Purani Delhi Chicken Qorma recipe, cooked in true Old Delhi style. This royal Mughlai dish is rich, aromatic, and perfect for festive occasions or a special family meal.

This recipe uses a blend of golden fried onions, yogurt, whole spices, and a freshly ground Qorma Khushboo Masala, making it fragrant, flavorful, and true to the traditional Purani Dilli taste.

📌 Ingredients for Purani Delhi Chicken Qorma:

Oil – 200 ml

Sliced Onions – 3 (fried till golden)

Yogurt – 200 g

Ginger Garlic Paste – 2 tbsp

Cloves – 4

Green Cardamom – 4

Black Cardamom – 1

Red Chili Powder – 1.5 tbsp

Coriander Powder – 3 tbsp

Turmeric Powder – 1 tsp

Cumin Powder – 1 tsp

Salt – to taste

Ginger Julienne – 1 tbsp

Chicken – 800 g

Qorma Khushboo Masala (freshly ground):

Cumin Powder – 1 tbsp

Black Cardamom Seeds – ½ tsp

Green Cardamom – 4

Cloves – 4

Nutmeg – ½ piece

Mace – 1

Cinnamon – 1 inch

👩‍🍳 Method (Step by Step):

Heat oil in a heavy-bottom lagan and fry sliced onions until golden brown. Remove and let them dry.

In the same oil, add yogurt, whole spices, and powdered spices. Mix well.

Add chicken and cook until completely tender.

Crush the fried onions and add them once chicken is cooked and oil separates. Sauté well.

Grind whole spices into Qorma Khushboo Masala, then sprinkle 1 tsp into the curry.

Add a dash of kewra water for fragrance.

Garnish with ginger julienne and serve hot with naan, paratha, or rice.
